What Was the Inspiration?
French, Italian, Indian, Greek, and more. What’s a hungry home chef to do? As I continued my plant-based journey, it didn’t take long to begin experimenting with world cuisines to veganize. I have always loved to cook! We enjoy pretty much any cuisine but sushi (as I always remind readers – we have 30,000 tastebuds – totally fine if there is something you don’t enjoy).
Researching, reading, staying abreast of the latest literature, and dabbling in veganizing traditional world cuisines jumpstarted this cookbook as I found it easier and easier to bring a continual variety of plant-based cuisines to the table. In our household, every day of the week is a different rotating cuisine. From Wok Wednesday to Taco Tuesday (anything in the TexMex cuisine!) and Spanish Saturday, we have found enjoying a rotation of cuisines keeps our eating pattern interesting and engaging. The second inspiration was creating dishes that anyone can do with accessible ingredients at most grocery markets or online! One of the things many of my contemporaries say is they don’t cook! Let’s work on that! For example, the mole recipe has SIX ingredients. How easy is that?

What This Cookbook Is
Let’s cut to the chase – this is a totally vegan, plant-based recipe collection. Honestly, the vast majority of the world eats many more varieties and amounts of plants than Americans! Let’s work on that! There are many reasons why a person wants to eat more plants – health management or prevention, the environment, animal protection, and more, or somewhere in between. Just eating more plants, whatever that looks like for you, is the healthier eating pattern option. This cookbook is designed for those who want some good solid, easy, entirely plant-based recipes to cook and enjoy.
